Pineapple Nut Cheesecake - cooking recipe

1 (20 oz.) can crushed unsweetened pineapple (undrained)
1 1/2 c. vanilla wafer crumbs
1/4 c. plus 2 Tbsp. unsalted butter, melted
1/4 c. firmly packed brown sugar
1 tsp. vanilla
1 egg white, beaten
2 (8 oz.) pkg. cream cheese, softened
2/3 c. sugar
4 eggs
1/4 c. light rum
1 tsp. vanilla
1 (12 oz.) pkg. grated coconut
1/2 c. chopped Macadamia nuts
1 (16 oz.) carton sour cream
1/4 c. plus 2 Tbsp. sugar
1 Tbsp. light rum
Preparation

Drain pineapple, measuring 1/4 cup juice.
Set pineapple and juice aside.
