Vichyssoise - cooking recipe
Ingredients

2 Tbsp. butter
2 onions, chopped fine
1 1/2 c. chopped leeks (white part)
1 qt. chicken broth
3 potatoes, quartered
1 c. milk or light cream
salt and white pepper
Preparation

Saute onions and leeks in butter slowly until transparent but not brown. Add broth and potatoes. Cook until potatoes are soft. Buzz in food processor or food mill. Add salt, pepper and milk to taste. Serve hot or cold. Garnish with finely chopped chives or curry.
