Banana-Ginger Muffins - cooking recipe

Ingredients
    2 medium ripe bananas, mashed
    1/3 c. maple syrup
    2/3 c. orange juice
    1/3 c. applesauce
    2 tsp. finely grated ginger root
    1 medium lemon
    2 c. flour
    1 tsp. baking powder
    1 tsp. baking soda
    1/2 tsp. salt
Preparation
    Heat oven to 350\u00b0.
    Put muffin cups in muffin pan.
    In a bowl, mix bananas, syrup, orange juice, applesauce, ginger and lemon. In another bowl, mix flour, baking powder, baking soda and salt together.
    Add banana mixture to dry mix and stir; don't overstir. Spoon batter until cups are 3/4 full.
    Bake 20 to 25 minutes. Makes 12 muffins, 137 calories each, fat .4 gm.
