Lemon Tarts - cooking recipe
Ingredients

4 eggs
8 egg yolks
1 c. sugar
2 Tbsp. grated lemon rind
3/4 c. fresh lemon juice
3/4 c. unsalted butter, cut into small pieces
2 1/2 c. all-purpose flour
1/4 c. plus 3 Tbsp. unsalted butter, cut into small pieces
1/4 c. plus 3 Tbsp. margarine, cut into small pieces
1/4 c. sugar
1 egg yolk
Garnish: fresh fruit and fresh mint sprigs
Preparation

Combine eggs, 8 egg yolks, 1 cup sugar, lemon rind, and lemon juice in a medium bowl; beat at high speed of an electric mixer until thick and lemon colored. Transfer egg mixture to top of double boiler. Cook over simmering water, stirring constantly with wire whisk, 10 to 15 minutes or until egg mixture is thickened.
