Rack Of Lamb - cooking recipe

Ingredients
    4 racks of lamb (1 to 1 1/2-lbs. each), trimmed
    2 Tbsp. Dijon mustard
    1 c. soft bread crumbs
    1/4 c. minced fresh parsley
    1/4 tsp. salt
    1/4 tsp. pepper
    1/4 c. butter or margarine, melted
    1 garlic clove, minced
Preparation
    Preheat oven to 350 degrees.
    Place lamb on a rack in a greased large baking pan, brush with mustard.
    In a small bowl, combine the bread crumbs, parsley, salt and pepper.
    Press onto the meat. Combine butter and garlic, drizzle over meat.
    Bake for 30-40 minutes or until meat reaches desired doneness (160 degrees for medium-well, 170 degrees for well-done).
    Yield:
    8 servings.
