Cheese Scalloped Carrots - cooking recipe

Ingredients
    2 lb. carrots, sliced
    2 Tbsp. butter
    1/2 c. finely chopped celery
    1/4 c. finely chopped onion
    2 Tbsp. all-purpose flour
    1 c. breadcrumbs
    2 Tbsp. butter, melted
    2 Tbsp. chopped fresh parsley
    1/4 tsp. salt
    1/4 tsp. dry mustard
    dash of pepper
    1 1/2 c. milk
    1 c. shredded Cheddar cheese
Preparation
    Cook carrots in boiling salted water to cover 8 to 10 minutes. Drain.
    Set aside.
    Melt 2 tablespoons butter.
    Add celery and onion.
    Cook until tender.
    Add flour, salt, mustard and pepper, stirring until blended.
    Cook 1 minute, stirring constantly. Gradually add milk; cook over medium heat until thickened and bubbly.
    Stir in cheese and carrots.
    Spoon into a lightly greased 1 1/2-quart casserole.
    Combine breadcrumbs, melted butter and parsley.
    Sprinkle over carrot mixture.
    Bake at 350\u00b0 for 25 minutes.
    Makes 6 to 8 servings.
