Glazed Carrots With Lemon And Garlic - cooking recipe

Ingredients
    1 lb. carrots, peeled
    1 lemon
    1 oz. butter or margarine
    1 Tbsp. sugar
    1 garlic clove, crushed
    salt and pepper
    dill or parsley sprigs
    shredded lemon rind
Preparation
    Cut carrots into thin rounds and finely pare lemon rind. Place carrots in a wide saucepan with pared lemon rind, butter, sugar, garlic and seasonings. Add sufficient cold water to just cover.
    Bring to a boil and cook over moderate heat for about 12 minutes until carrots are tender and liquid has evaporated, shaking pan occasionally to prevent sticking.
    Serve garnished with dill and lemon rind.
