Arizona Skillet Dinner - cooking recipe
Ingredients

1 Tbsp. corn oil
1 medium onion, chopped
1 medium green pepper, chopped
1/4 tsp. garlic powder
2 tsp. chili powder
1/2 tsp. salt
1/2 tsp. cumin (optional)
2 (16 oz.) cans tomatoes
1 (16 oz.) can kidney beans, rinsed and drained
1 (16 oz.) can corn
8 oz. pkg. macaroni, cooked and drained
1/2 c. shredded fat-free Monterey Jack cheese
Preparation

Heat oil.
Add onion, green pepper and spices. Saute 4 minutes. Stir in tomatoes.
Add beans and corn. Bring to a boil. Reduce heat and simmer 15 minutes. Add macaroni.
Sprinkle with cheese and serve.
