Energy Bars - cooking recipe

Ingredients
    2 c. whole wheat pastry flour
    2 tsp. baking powder
    1/2 tsp. cinnamon
    1/2 tsp. nutmeg
    1/2 c. butter or margarine
    1/3 c. honey
    1 egg
    1 tsp. vanilla
    2 tsp. grated orange rind
    1/3 c. orange juice
    1/2 c. shredded coconut
    1 1/2 c. shredded carrots
Preparation
    In small mixing bowl, combine the flour, baking powder, cinnamon and nutmeg.
    In medium mixing bowl, beat butter until fluffy.
    Beat in honey, egg, vanilla and orange rind.
    Beat in the dry ingredients alternately with the orange juice.
    Stir in coconut and carrots.
    Pour into a greased or parchment-lined 9 x 13-inch baking pan.
    Bake at 325\u00b0 for 20 to 30 minutes.
    Cool and cut into bars.
    Makes 24 bars.
