Swiss Steak - cooking recipe
Ingredients

2 lb. round steak
2 Tbsp. flour
1 tsp. salt
1/4 tsp. pepper
2 Tbsp. shortening
1/2 c. onion
1/2 c. celery, chopped
1/2 c. carrots, chopped
1 1/2 c. canned tomatoes
Preparation

Combine flour, salt and pepper.
Sprinkle over both sides; pound into steak.
Cut into serving pieces.
Melt shortening in pan over medium heat.
Brown meat well on both sides.
Combine vegetables and spread over meat.
Cover; reduce heat to low and simmer until meat is very tender, approximately 1 1/2 to 2 hours. Remove meat and thicken remaining sauce.
Pour over steak.
