Sweet Potato Puff - cooking recipe
Ingredients

2 1/2 c. cooked, mashed sweet potatoes
1/4 c. orange juice
1/4 tsp. ground ginger
1/8 tsp. ground nutmeg
2 egg whites
Preparation

Add the orange juice, ginger and nutmeg to the hot cooked and mashed sweet potatoes.
Beat the egg whites until stiff peaks form and fold them through the sweet potato mixture.
Spoon the potatoes into a nonstick dish and bake in a 350\u00b0 oven for 30 minutes.
Serves 4 to 6.
