Stir-Fry Rice - cooking recipe

Ingredients
    2 c. rice, cooked
    1 medium onion, chopped
    2 eggs
    2 Tbsp. olive or safflower oil
    1 Tbsp. sugar
    1 Tbsp. low sodium soy sauce
    light vegetable oil cooking spray
Preparation
    Spray wok or large skillet with light vegetable oil cooking oil.
    Saute onion over medium heat about 3 minutes.
    Turn heat to high.
    Add rice; toss constantly.
    In a bowl, combine oil, sugar, soy sauce and eggs.
    Beat well.
    Pour oil mixture over rice.
    Toss constantly until all is well mixed and no longer sticky.
