Squash Patties - cooking recipe

Ingredients
    8 medium yellow squash, shredded
    1 medium onion, finely chopped
    2 tsp. salt
    1 1/2 c. shredded Cheddar cheese
    1 c. unsifted self-rising flour
    1/2 c. corn meal
    1/4 tsp. pepper
    1 egg, slightly beaten
Preparation
    Place squash and onion in colander.
    Add salt.
    Let drain until moisture is gone.
    Combine drained squash, onion, cheese, flour, corn meal and pepper; mix well.
    Stir in eggs.
    Brush griddle with thin coating of oil and heat over medium flame. Using 1/3 cup mixture for each patty, fry until golden brown on both sides.
    Makes 8 servings.
