Lemon Cheese Cake - cooking recipe
Ingredients

                            1 c. graham cracker crumbs
 
1 1/4 c. sugar
3 Tbsp. light Weight Watchers oleo
32 oz. low-fat cottage cheese
1 1/2 c. Egg Beaters
1/4 c. skim milk
1/4 c. flour
2 Tbsp. lemon juice
1 tsp. grated lemon rind
Preparation

                            Combine crumbs, 1/4 cup sugar and margarine.
 
Press in pan (9-inch) and 1-inch up the sides.
Combine cottage cheese and Egg Beaters until smooth.
Combine with rest of ingredients with mixer.
Pour into pan.
Bake 1 hour and 15 minutes or until set. Cool in oven for 1 hour with door ajar.
Chill at least 2 hours. Garnish with lemon slices if desired.
Top with fruit.
One-half fat per serving; 145 calories.
