Stuffed Roly Poly Zucchini - cooking recipe

Ingredients
    4 medium size roly poly zucchini
    1/2 c. shredded Swiss cheese
    1/2 c. sour cream
    1/3 c. finely grated Parmesan cheese
    2 large eggs
    1/4 tsp. salt
    1/4 tsp. pepper
Preparation
    Cook zucchini in boiling water 5 minutes.
    Drain and rinse in cold water to cool.
    Cut in half and scoop out center, leaving 3/4 inch thick shell.
    Place shells in
    shallow baking pan.
    Heat oven to 400\u00b0.
