Veggie Sandwiches - cooking recipe

Ingredients
    2 carrots
    1 small onion
    2 cucumbers
    8 oz. cream cheese (can use low-fat)
    3 Tbsp. Dukes mayonnaise
    salt to taste
    dash of red pepper (optional)
Preparation
    Grate and drain carrots, onion and cucumbers.
    Add mayonnaise to cream cheese; mix well.
    Add veggies, salt and red pepper until well blended.
    Makes enough spread for 1 pound of bread.
