Mini Meat Loaves And Vegetables - cooking recipe

Ingredients
    1 1/2 lb. ground beef
    1/4 tsp. salt
    2 eggs
    1 c. catsup, divided
    3/4 c. Italian bread crumbs
    1 onion, chopped
    4 potatoes, sliced
    1 onion, sliced
    1 or 2 carrots, sliced
Preparation
    Combine ground beef, salt, eggs, 1/2 cup catsup, bread crumbs and chopped onion.
    Shape into 3 mini-loaves.
    Put in a 10-inch square baking dish.
    Place sliced vegetables around and between loaves.
    Salt and pepper; pour remaining catsup over vegetables. Bake at 350\u00b0 for 35 minutes.
    Stir vegetables, cover and cook an additional 15 minutes.
    Uncover and cook another 15 minutes.
    Let stand awhile for better slicing.
