Southern Fried Chicken - cooking recipe

Ingredients
    3 lb. fryer
    1/2 c. rich milk (or evaporated)
    1/2 c. water
    2 tsp. salt
    1/4 tsp. pepper
    1 tsp. paprika
    1 c. flour
    1/2 inch cooking oil in a heavy skillet
Preparation
    Mix water and milk. Cut chicken and dip in liquid. Put dry ingredients in paper bag. Heat shortening to near smoking.
    Take chicken from liquid; put one at a time in paper bag and shake. Put in skillet. Brown both sides, covered tightly. Turn heat low and cook 40 minutes. Uncover; turn heat up to crisp the chicken, 5 to 10 minutes, turning once.
