Lo-Cal Summer Squash Delight - cooking recipe
Ingredients

2 lb. yellow squash, sliced
1/2 c. onion, chopped
1/2 c. chopped bell pepper
1/4 tsp. salt
pinch of cayenne pepper
2 Tbsp. lo-cal mayonnaise
1 c. water chestnuts, chopped
1/2 c. egg substitute
Preparation

Mix all together and pour into sprayed casserole.
Bake at 350\u00b0 for 25 minutes.
Top with 3/4 cup cracker crumbs and 1/2 cup Cheddar cheese (grated) and bake 10 minutes longer.
