Cheese And Spinach Puffs - cooking recipe

Ingredients
    1 (10 oz.) pkg. chopped spinach, thawed
    1/2 c. finely chopped onion
    1/2 c. water
    2 eggs, slightly beaten
    1/2 c. grated Parmesan cheese
    1/2 c. shredded Cheddar cheese
    1/4 c. plus 2 Tbsp. Blue cheese dressing
    1 (8 1/2 oz.) box Jiffy corn muffin mix
Preparation
    Combine spinach, onion, water in small saucepan.
    Bring to a boil and cook 10 minutes.
    Drain well and squeeze to remove excess liquid.
    Combine spinach mixture and remaining ingredients in medium size mixing bowl.
    Stir well.
    Cover and chill 2 hours. Shape into 1 inch balls.
    Place 1 1/2 inches apart on lightly greased baking sheets.
    Chill at least 30 minutes before baking. Bake at 350\u00b0 for 10 minutes.
    Serve warm.
    Yield:
    4 dozen.
