Barbara Bush'S Zucchini Soup - cooking recipe

Ingredients
    1 lb. unpeeled zucchini
    2 Tbsp. shallots, onion or leeks
    1 clove garlic, minced
    2 Tbsp. butter
    1 3/4 c. chicken broth
    1 tsp. curry powder
    1/2 tsp. salt
    1/2 c. coffee cream
Preparation
    Chop unpeeled zucchini, shallots and garlic.
    Put in heavy frying pan.
    Cook with butter for 10 to 20 minutes.
    Stir to keep from burning.
    You don't want it to brown.
    Put all ingredients and seasoning in blender and blend.
    Add cream.
    Serve hot with croutons.
    Serve cold with chives.
    Makes 8 serving and is also suitable for freezing.
