Texas Style Beans And Rice Casserole - cooking recipe

Ingredients
    1 (16 oz.) can tomato bits
    2 c. boiling water
    1 1/2 c. uncooked brown rice or combination of rices
    2 c. cooked, drained red beans
    2 chopped onions
    2 minced garlic cloves
    4 Tbsp. raisins
    2 tsp. cumin seed (I use 1 tsp. ground cumin)
    2 tsp. chili powder
    shredded Cheddar cheese (optional)
    1 oz. crushed corn chips (optional)
Preparation
    Combine ingredients (except cheese and chips).
    Bake in covered casserole in preheated oven at 350\u00b0 for 1 hour.
    Uncover and sprinkle with cheese and then corn chips.
    Bake, uncovered, for 15 minutes more.
    (To retain whole appearance of beans, add about 30 minutes into the baking time.)
