Chicken Gumbo - cooking recipe

Ingredients
    1 whole chicken
    4 c. water
    celery tops
    1 onion, sliced
    1 tsp. salt
    1/4 tsp. pepper
    1/4 lb. bacon, cut up
    1 green pepper, chopped
    1 large onion, chopped
    1 1/2 c. chopped celery
    2 Tbsp. chopped fresh parsley
    1 (1 lb. 13 oz.) tomatoes, mashed
    stock from chicken
    2 to 3 c. water
    1 to 2 tsp. yogi shrimp boil (concentrate)
    2 c. sliced okra
Preparation
    Boil chicken
    in 4 cups water with celery tops, sliced onion, salt and pepper until meat is done.
    When cool, remove meat from bone.
    Reserve stock and skim fat when cool.
    Saute bacon, pepper, onion and celery until transparent.
    Add parsley, tomatoes, chicken stock, water and shrimp boil.
    Cook until vegetables are tender.
    Add chicken and okra; cook 10 to 20 minutes more.
    May be served over rice or as a soup.
    Serves 8 to 10.
