Mystery Cheesecake - cooking recipe

Ingredients
    1 Duncan Hines yellow cake mix (mix according to directions)
    2 lb. whole milk Ricotta
    3/4 c. sugar
    4 eggs
    1/2 tsp. vanilla, anise, almond or rum extract
Preparation
    Pour cake mix into 9 x 12 x 2 floured and greased pan.
    In same bowl, mix by hand Ricotta, sugar, eggs and vanilla.
    Spread evenly on top of cake mix.
    Bake 1 hour at 350\u00b0.
    Cool (sprinkle with confectioners sugar, when serving).
    (Better second day than first.)
    Freezes well!
