San Perido Eggplant - cooking recipe

Ingredients
    1 eggplant
    sliced Provolone cheese
    fresh basil
    marinara or spaghetti sauce
    olive oil
Preparation
    Trim skin off eggplant.
    Slice into rounds 1-inch thick. Liberally oil cookie sheet with olive oil.
    Place eggplant on cookie sheet and bake in a 375\u00b0 oven approximately 7 to 10 minutes.
    Remove cookie sheet and top each eggplant round with 2 tablespoons of marinara sauce.
    Return to oven for 5 minutes. Remove cookie sheet, top each round with 1 or 2 fresh basil leaves and sliced Provolone cheese (approximately 1 ounce each).
    Turn off oven.
    Return to oven until cheese is melted.
