Lemon Squares - cooking recipe
Ingredients

1 c. all-purpose flour
1/2 c. margarine or butter, softened
1/4 c. powdered sugar
2 eggs
1 c. granulated sugar
1/2 tsp. baking powder
1/4 tsp. salt
2 Tbsp. lemon juice
2 tsp. grated lemon peel (optional)
Preparation

Heat oven to
350\u00b0.
Mix flour, margarine and powdered sugar. Press in an ungreased square pan (8 x 8 x 2-inch or 9 x 9 x 2-inch), building up 1/2-inch edges.
Bake for 20 minutes.
Beat remaining ingredients until light and fluffy, about 3 minutes. Pour over hot crust and bake until no indentation remains when touched lightly in center, about 25 minutes.
Cool and sprinkle with powdered sugar.
Cut into about 1 1/2-inch squares.
Makes 25 cookies.
