Chicken And Sausage Gumbo - cooking recipe
Ingredients

3 to 4 lb. chicken
1 large onion, chopped
2 stalks celery, chopped
2 lb. sausage, sliced 1-inch thick, then quartered
2 bunches green onion, chopped
1/2 green pepper, chopped
1/2 red pepper, chopped
2 cloves garlic, minced
12 Tbsp. bacon drippings (for roux)
12 Tbsp. flour (for roux)
approximately 2 qt. water
Preparation

Boil chicken with chopped onion and celery.
Remove chicken and dice.
Reserve stock.
Brown sausage with green onions, bell peppers and garlic.
