Sirloin - Tofu Meat Loaf - cooking recipe

Ingredients
    2 lb. ground sirloin
    1 (16 oz.) pkg. tofu, regular or extra firm
    1 1/2 c. V-8 juice
    1 1/2 c. uncooked Quick Quaker oatmeal
    4 egg whites or 2 whole eggs
    1 medium onion, diced
    1/2 c. water
    3 beef bouillon cubes
    1/4 tsp. pepper
    1/2 tsp. seasoning mix or Season-All
    1/2 tsp. dried parsley flakes
    garlic powder and salt, as desired
Preparation
    Preheat oven to 350\u00b0.
    Cook onions in water until transparent and soft with all of the suggested seasonings, then set aside. Mash the block of tofu thoroughly, then mix with ground sirloin, using fork or food processor.
    In separate bowl, combine juice, oats, egg whites and cooked onions.
    Mix thoroughly with tofu mixture.
    Divide mixture in half.
    Press into two 8 x 4-inch loaf/bread pans or use small individual size loaf pans.
    Bake 1 hour or until meat is cooked.
    (When meat is no longer pink and juices are clear.)
    Drain off any juices.
    Let stand in pan about 10 minutes.
    Slice and serve.
