Zucchini Relish - cooking recipe

Ingredients
    12 c. sliced zucchini
    4 c. sliced onions
    6 carrots
    1 green pepper
    1 red pepper
    5 Tbsp. pickling salt
    3/4 Tbsp. cornstarch
    1 1/2 tsp. celery salt
    1 1/2 tsp. nutmeg
    3/4 tsp. turmeric
    1 tsp. dry mustard
    5 c. sugar
    5 c. vinegar
Preparation
    Grind up the vegies.
    Add salt.
    Let stand overnight.
    Rinse and drain well.
    Add remaining ingredients.
    Simmer for 20 minutes until hot.
    Pack in hot jars.
    Makes about 6 pints.
