Garlic Roasted Vegetables - cooking recipe

Ingredients
    2 Tbsp. olive oil
    1 1/2 tsp. grated lemon peel
    1 1/4 tsp. salt
    1/2 tsp. pepper
    1 tsp. rosemary, crumbled
    8 red potatoes (about 1 1/2 lb.), quartered
    8 garlic cloves (unpeeled)
    4 medium red onions, quartered
    1 large red pepper, cut into 3/4-inch strips
Preparation
    Preheat oven to 450\u00b0.
    Combine oil, lemon peel, salt, pepper, rosemary, potatoes, garlic, onions and red pepper in large bowl; toss to coat well.
    Spread in a jelly roll pan.
    Roast 40 to 45 minutes until vegetables are tender.
    Makes 4 servings.
