Golden Velvet Carrots - cooking recipe
Ingredients

2 Tbsp. imitation or diet margarine
3 1/2 c. whole baby carrots, divided
3/4 c. orange juice
1/4 tsp. vanilla extract
1/8 tsp. cinnamon
chopped fresh parsley (for garnish)
Preparation

Melt margarine in top of double boiler over boiling water. Pour margarine into blender container.
Add 1/2 cup carrots, all of juice, vanilla and cinnamon; process at medium speed until smooth.
Return margarine mixture to double boiler; add remaining carrots.
Heat and garnish.
Yield:
6 servings.
