Blue Cheese Potato Salad - cooking recipe
Ingredients

1 c. creamed cottage cheese
1 c. dairy sour cream
2 tsp. prepared mustard
2 tsp. seasoned salt
4 c. sliced, cooked potatoes
1 c. sliced green onions (with tops)
1 c. sliced celery
1/2 c. diced green pepper
3 hard-cooked eggs, coarsely chopped
1 (1 oz.) pkg. Blue cheese, crumbled
Preparation

While potatoes are warm, drizzle with a little vinegar. Combine cottage cheese, sour cream, mustard and salt.
Pour over potatoes.
Add the onion, celery, green pepper and eggs.
Mix carefully!
Chill several hours to blend flavors.
Fold in Blue cheese just before serving. Serves 6 to 8.
