Boozed Onion Soup(Serves 4) - cooking recipe

Ingredients
    1 large Spanish onion
    butter
    2 oz. bourbon
    3 c. chicken broth
    salt and pepper
    fresh ground Parmesan cheese
Preparation
    Cut onion in half through stem end, then into the thinnest slices possible.
    Saute in a soup pot with a few tablespoons of butter.
    When the onions are rich yellow, not brown, add the bourbon.
    Wait a few seconds until the bourbon is hot, then set a match to the pot and let the booze blaze for 10 to 15 seconds.
    To stop the blaze, cover the pot with a lid.
    Add the chicken broth; simmer for 15 minutes.
    Add salt and pepper to taste.
    Serve with cheese sprinkled on top once in a bowl.
