Diabetic Fruit Cake - cooking recipe
Ingredients

1 c. flour
1/4 tsp. salt
1/2 c. sugar substitute
2 to 3 c. raisins
1/2 c. figs
1 tsp. cinnamon
1/4 c. liquid (unsweetened fruit juice, skim milk or coffee)
3/4 tsp. baking powder
1/2 c. liquid shortening
2 to 3 c. dates
2 to 3 c. nuts
2 eggs
1/2 tsp. nutmeg
Preparation

Mix dry ingredients (sift together) and add beaten eggs and oil to dry mixture and juice.
Then add fruit and nuts.
Bake in a loaf pan in a 300\u00b0 oven for 45 minutes.
This makes 18 slices, each of which equals 1 fat, 1 bread and 1/2 fruit.
