Roast Lamb(Arni Psito) - cooking recipe
Ingredients

5 lb. leg of lamb
2 cloves garlic, minced
salt and pepper
juice of 2 lemons
oregano
1 c. water
4 Tbsp. butter
Preparation

Cut incisions in meat and fill with garlic mixed with salt and pepper.
Rub leg of lamb with lemon juice, oregano and additional salt and pepper.
Place in roasting pan with water and top with butter.
Bake in hot oven (450\u00b0) until browned, then lower heat to 350\u00b0, cover and bake until done.
When meat is half cooked, peeled and quartered potatoes may be placed in the roasting pan around the lamb.
Uncover during last minutes of baking to brown meat and potatoes.
Serves 6 to 8.
