Eggplant Casserole - cooking recipe

Ingredients
    1 large eggplant, peeled and cubed
    1 (8 oz.) pkg. Mozzarella cheese, cubed
    1 (15 oz.) jar marinara sauce
    1/3 c. grated Parmesan cheese
Preparation
    Cook eggplant in boiling water for 5 minutes; drain well. Place in a lightly greased 1 1/2-quart casserole dish.
    Add Mozzarella cheese and top with marinara sauce.
    Bake, covered, at 350\u00b0 for 30 minutes.
    Sprinkle with Parmesan cheese and bake an additional 5 minutes.
