*Mexican Fried Rice - cooking recipe

Ingredients
    1 c. long grain rice
    1 small onion, diced
    1/2 green pepper, diced
    1/2 c. bacon drippings
    2 1/2 c. chicken or beef stock
    1 medium tomato, diced
Preparation
    In hot bacon drippings, pour the rice and cook over medium heat until light brown.
    Add onion and green pepper; cook for a few minutes longer.
    Add the tomato.
    Pour in the stock and bring to a boil.
    Lower heat and simmer until liquid is absorbed and rice is tender, about 25 to 50 minutes.
