Chicken Cilantro - cooking recipe
Ingredients

6 boneless chicken breasts
2 c. uncooked rice
1 c. chicken broth
4 to 6 sliced tomatoes
1 onion, chopped
1 bunch cilantro, chopped
2 c. grated Monterey Jack cheese
Preparation

Saute the chicken breasts in 1 tablespoon oil.
Set aside. Saute onion and cilantro; set aside.
Place uncooked rice in bottom of a 9 x 13-inch casserole. Top with 1/2 of the tomato slices, onions and cilantro.
Sprinkle with 1/2 of the cheese. Repeat layers of vegetables.
Place chicken breasts on top.
Pour broth over all. Cover and cook in
a 350\u00b0 oven. Check condition of rice and add more broth, if necessary. Top with cheese and cook, uncovered, until cheese is melted.
