Pigeon Peas And Rice - cooking recipe

Ingredients
    1 small green pepper
    1 small onion
    2 cloves garlic
    6 Tbsp. tomato sauce
    1 (16 oz.) can pigeon peas
    1 c. uncooked rice
    2 c. water
    salt and pepper
    smoked bacon
    thyme
Preparation
    Cook smoked bacon until crisp.
    Add onion, garlic and green pepper.
    Saute until soft.
    Add pigeon peas and tomato sauce along with salt, pepper and thyme.
    Stir well.
    Add water and rice. Simmer uncovered for 15 minutes or until rice is cooked.
