Tomatoes Stuffed With Chicken Salad - cooking recipe

Ingredients
    6 medium firm tomatoes
    1 c. diced, boiled chicken
    1/2 c. diced celery with leaves
    1 c. mayonnaise
    3 pimiento, drained and diced
    2 whole scallions, minced or 1 tsp. grated onion
    8 parsley sprigs (leaves only), chopped
    salt and pepper to taste
Preparation
    Cut caps off tomatoes and reserve.
    Scoop out deep hollow. Turn upside down to drain 15 minutes.
    Combine remaining ingredients and mix well.
    Stuff tomatoes with mixture and press caps on top.
    Refrigerate.
