Turkey Carcass Soup - cooking recipe

Ingredients
    1 turkey carcass
    4 qt. water
    6 small potatoes, diced
    4 large carrots, diced
    1 large onion, diced
    1 1/2 c. shredded cabbage
    1 (7 oz.) can drained tomatoes, sliced (optional)
    1/2 c. uncooked barley
    1 Tbsp. Worcestershire sauce
    1 1/2 tsp. salt
    1 tsp. dried parsley
    1 tsp. basil
    1 bay leaf
    1/4 tsp. pepper
    1/4 tsp. paprika
    1/4 tsp. poultry seasoning
    pinch of thyme
Preparation
    Bring carcass to a boil in large pot; then simmer for 2 hours. Take
    carcass
    out
    of
    water and remove meat.
    Return meat to pot
    and
    add
    remaining ingredients.
    Simmer 1 hour. Yields 5 quarts.
