Ingredients

1 c. shortening
2 c. sugar
1 tsp. vanilla
3 c. sifted flour
3 tsp. baking powder
1 tsp. salt
1/2 c. milk
1/2 c. coconut milk
1 c. grated fresh coconut
6 egg whites, stiffly beaten
Preparation

Cream shortening and sugar until fluffy; stir in vanilla. Combine flour, baking powder and salt; add creamed mixture alternately with milk and coconut milk.
Stir in coconut; fold in egg whites.
Turn into two greased paper-lined cake pans.
Bake at 365\u00b0 for 25 minutes.
