Double Corn Muffins - cooking recipe

Ingredients
    1 (8 oz.) can cream-style corn
    3/4 c. shredded sharp Cheddar cheese
    1/4 c. sour cream
    1/4 c milk
    1 egg
    1 Tbsp. sugar (optional)
    1/2 to 1 c. chopped onion
    nonstick cooking spray
    1 1/2 c. self-rising cornmeal
Preparation
    Combine corn, cheese, sour cream, milk, egg and sugar until well mixed.
    Spray nonstick cooking spray directly on chopped onion and microwave 2 to 3 minutes.
    Add to corn mixture.
    Stir in cornmeal and blend well.
    Fill muffin cups 3/4 to almost full. Bake at 350\u00b0 for 25 to 30 minutes.
    Makes 12 muffins.
