Honey Roasted Fruit - cooking recipe
Ingredients

4 large navel oranges
2 pink grapefruit
1 pineapple (ripe)
4 medium ripe bananas
2 Tbsp. lemon juice
1/2 tsp. dried thyme
1/4 c. honey
1/4 c. dark brown sugar
sprigs of fresh mint (optional)
Preparation

Preheat oven to 350\u00b0.
Cut and peel oranges and grapefruit. Cut into segments.
Save juices.
Set aside.
Peel pineapple; cut crosswise into 1/2-inch thick slices.
Core center and cut into 8 slices in quarters.
Peel bananas.
Halve crosswise, then lengthwise.
Toss in bowl with lemon juice.
Arrange in 9 x 13 x 2-inch baking dish.
Arrange pineapple, overlapping the pieces slightly.
Next, a row of orange segments, followed by grapefruit and oranges, then finish with bananas.
Can be made ahead of time to this point and refrigerated.
Sprinkle with thyme.
Drizzle honey over top, then brown sugar.
Bake 30 minutes, basting twice with any pan juices.
Garnish with mint.
Serves 6 to 8.
