Ingredients

1/4 c. flour
1 c. sugar
1/2 tsp. salt
1 c. milk
2 Tbsp. melted butter
yolks of 3 large eggs, beaten
rind of 1 lemon, grated
3 Tbsp. lemon juice
3 egg whites, stiffly beaten
Preparation

Combine flour, sugar and salt.
Add milk, butter and egg yolks. Add lemon rind and juice.
Fold in egg whites.
Pour in a baking dish; set pan in hot water.
Bake on low rack of oven for 1 hour at 325\u00b0.
Cake should be light brown on top.
