Vidalia Onion Casserole - cooking recipe

4 to 5 large Vidalia onions
1 stick butter
2 cans chicken broth
1 wedge fresh Parmesan cheese
4 Tbsp. vegetable oil
1 large box Ritz crackers
Preparation

Melt stick of butter in a large pot with oil.
Add onions, finely chopped.
Saute until onions are tender.
Add chicken broth and let simmer for a few minutes, then add box of Ritz crackers. Add enough crackers to make the mixture very thick and stiff. Grate the cheese.
Layer casserole dish with a layer of mixture, then a layer of cheese, alternating until finished.
Put some cheese on top.
Bake at 350\u00b0 for 20 minutes, just before serving.
