Baked Eggplant Casserole - cooking recipe
Ingredients

1 eggplant, approximately 1 pound
1/2 pound dry bread crumbs
1 small can evaporated milk
1/4 cup chopped bell pepper
1/4 cup chopped onion
1/4 cup chopped celery
1/2 stick butter
2 eggs, beaten
1/4 tsp. salt
1/4 tsp. pepper
1/8 tsp. sage
1 tsp. chopped pimentos
2 oz. grated Cheddar cheese
Preparation

Peel eggplant and soak in salted water for several hours in refrigerator.
Soak bread crumbs in milk.
Saute vegetables in butter. Boil eggplant until nearly tender and then drain well. Mix eggplant, crumbs, veggies and seasoning.
Place in greased casserole dish. Top with grated cheese.
Bake at 350\u00b0 1 hour or until golden brown.
