Basil Tomato Salad - cooking recipe

Ingredients
    2 Tbsp. olive oil
    2 Tbsp. cider vinegar
    2 tsp. chopped fresh basil or 1 tsp. dried basil
    1/2 tsp. salt
    1/4 tsp. pepper
    3 c. cooked rice, cooled
    2 medium tomatoes, chopped
    1 medium cucumber, seeded and chopped
    1 small red onion, chopped
Preparation
    In small bowl whisk together oil, vinegar, basil, salt and pepper.
    Add rice, tomatoes, cucumbers and onion.
    Toss.
    Serve chilled.
    Yield:
    6 servings.
