Greenbrier Pumpkin Muffins - cooking recipe

Ingredients
    1 1/4 c. plus 2 Tbsp. sugar
    1 1/4 c. (10 oz.) pumpkin
    1/2 c. butter, melted
    2 eggs
    1 1/2 c. flour
    2 tsp. baking powder
    1 tsp. plus 1/4 tsp. cinnamon
    1/4 tsp. nutmeg
    1/4 tsp. salt
    1 c. milk
    1/2 c. raisins
    1/4 c. chopped pecans or walnuts
Preparation
    Combine 1 1/4 cups sugar, pumpkin and butter.
    Blend in eggs. Combine flour, baking powder, 1 teaspoon cinnamon, nutmeg and salt.
    Add combined dry ingredients alternately with milk, mixing well after each addition.
    Stir in raisins and nuts.
    Spoon into well-greased miniature muffin pans, filling 2/3 full.
    Sprinkle with combined 2 tablespoons sugar and 1/4 teaspoon cinnamon.
    Bake at 400\u00b0 for 25 minutes.
    Makes 5 dozen.
