Mincemeat - cooking recipe
Ingredients

5 c. chopped lean meat
2 1/2 c. chopped suet
7 1/2 c. chopped apples
3 c. liquor in which meat was cooked
5 c. sugar
3 c. cider
1/2 c. vinegar
1/2 lb. chopped citron
3 c. raisins (seedless)
juice and grated rind of 2 lemons
juice and grated rind of 2 oranges
2 Tbsp. cinnamon
1 Tbsp. cloves
2 Tbsp. allspice
1/4 tsp. grated nutmeg
Preparation
-
Mix ingredients in order and let simmer over slow fire for 4 hours; stir often.
Pack in hot jars and seal at once.
Process 10 minutes.
Makes 6 quarts.
